Roast Chicken....Jamie Oliver style

We tried a new chicken dish recently. Marinate ingredients:
thyme, thai mint,paprika, cumin seeds, cloves, garlic, rosemary, salt, vinegar, tomato sauce, olive oil, black pepper, orange peel/juice.

My Herb Garden

It's still the beginning part of winter, I've started to plant more seedlings for my herb garden.Pict0334 From left to right: Thai mint(good for "Asam pedas", Italian Parsley(key ingredient in soups) , Mint (use in Brani rice), Rosemary(great with lamb chops) and Parsley. Hope the rosemary can grow in time for summer bbq.
Here is my chilli plant, about to go into "sleeping" mode due to the lingering cold weather. The chillis can't seem to get bigger and its leaves are turning pale.

Hmmmmmmm.........

Tried baking cake for the first time in my life ......
Here is the recipe extracted from Living Now Magazine by Adam O Sullivan (Head Chef of Mondo, Brisbane)

Ingredients:

Dark chocolate 300gm
Butter 200gm
Brown sugar 200gm
Almond meal 300gm
Eggs 6 large eggs

Method:
Pre heat oven to 170 deg C
Melt together butter and chocolate in a clean, dry, stainless steel bowl over a pot of barely simmering water.

Separate eggs and set white aside.

Cream together yolks and sugar until pale and double in size. Add melted chocolate to egg mixture and beat on slow speed until combined. Fold in almond meal with a spatula.

Whisk egg whites to stiff peaks. Fold whites through cake mixture.

Transfer mixture to a greased and lined cake tin (24cm diameter).

Bake for 25 to 40 mins.

Cake should be springy in the middle and skewer should come out clean. Remove from oven and transfer to cooling rack. Can be served hot or cold.

Note: Always test cake while still in oven. If you remove it when not yet cooked, it will collapse.

Dun follow me....I'm goin' fishing

Initial plan was to go camping, Pict0175 but luck was'nt on our side as all the campsites at Portalington were full :(
